A mix match of spices and vegetables from all over India. The curd is a very key ingredient as it combines the uniqueness and perfection of the vegetable mix.
STEP 1.Take 250 grams of lady finger, wash it well and clean the unessential parts.

STEP 3.Take an onion, cut slit it in 4 pieces and clean wash it as needed.

STEP 4.Take a pan with some ghee and put the lady fingers in it, roast for 5 minutes on medium flame.

STEP 5.Take the lady fingers out.

STEP 6.Now take the same pan and put some onion to roast in it. Take out the onions and place it aside

STEP 7.Take a pan, add some ghee, asafoetida, cumin seeds, garlics, green chillies, ginger paste roast all the ingredients for a few minutes on low flame.

STEP 8.Add some chopped onions, don

STEP 9.T cook the onions too much, keep them crunchy. Add some chopped tomatoes. Cook for few minutes and add some salt.

STEP 10.Take half a cup of curd, add some red chilli powder., turmeric powder and coriander powder and mix nicely. Keep aside.

STEP 11.Add the curd mixture in the pan and keep stirring. Cook for 15 minutes on low flame. When the masala is cooked properly add the cooked lady fingers and onions and mix well.

STEP 12.Cook for 2 minutes more on low flame. Serve hot and plenty.
