Cooking Directions

  • STEP 1.In a bowl, marinate the meat with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Let it marinate for at least 1 hour.
  • STEP 2.Heat oil in a pan and add the marinated meat. Cook until the meat is browned and the yogurt is well cooked.
  • STEP 3.In a separate pan, heat ghee and add cumin seeds, cloves, cinnamon stick, and bay leaves. Fry until fragrant.
  • STEP 4.Add chopped onions and cook until golden brown. Then, add the cooked meat and mix well.
  • STEP 5.Add water and let the meat simmer on low heat until tender and the gravy thickens.
  • STEP 6.For the smoky flavor, heat a piece of coal until red hot. Place it on a small metal bowl in the center of the meat. Drizzle ghee over the coal and quickly cover the pan with a lid to trap the smoke. Let it smoke for a few minutes.
  • STEP 7.Remove the coal and bowl from the pan. Garnish with fresh coriander leaves and serve hot with naan or rice.

  • Make sure to marinate the meat for at least 1 hour to allow the flavors to penetrate.
  • Adjust the spice levels according to your preference.
  • To achieve a smoky flavor, use natural hardwood charcoal.
