Cooking Directions

  • STEP 1.Start by cutting the eggplant into small cubes and soaking them in water for 10 minutes to remove any bitterness.
  • STEP 2.In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and saut茅 until golden brown.
  • STEP 3.Add ginger-garlic paste and cook for a minute. Then, add the spices - turmeric, cumin powder, coriander powder, and red chili powder. Mix well.
  • STEP 4.Drain the water from the soaked eggplant and add it to the pan. Cook until the eggplant is soft and cooked through.
  • STEP 5.In a separate bowl, whisk yogurt with a little water to make it smooth. Add this yogurt mixture to the pan and mix well.
  • STEP 6.Simmer the dish for a few minutes until the flavors blend together. Garnish with fresh coriander leaves.
  • STEP 7.Serve the Dahi Baingan hot with rice or roti.
