This is a traditional Odia raita recipe. This type of raita we people mostly prepare in summer. This recipe is also prepared in any feast. This is so yummilicious in taste and very easy to make also
STEP 2.Heat a kadai and put 1.5 oil in it and the put brinjal pieces in it along with salt, turmeric and chilli powder.
STEP 3.Cook till they become soft and then keep them aside.
STEP 4.Roast the cumin seeds and 2 red chilli and then make a powder of it.
STEP 5.Crush the ginger and green chilli in a mortar.
STEP 6.Beat the curd well along with some salt, sugar and mix the mashed ginger chilli.
STEP 7.Then mix the fried eggplants in it.
STEP 8.In a ladle heat 1/2 tsp of oil and put punch phoran in it.
STEP 9.When the mustard in the punch phoran crackle then add the curry leaves and red chilli in it, switch off the flame and mix them in the curd and mix the roasted cumin red chilli powder in it.
STEP 10.Now your dahi baigan is ready to serve. Serve as a side dish along with rice.
