Curry Udon Recipe

This is not just a simple bowl of udon noodles but curry flavoured noodles with pork, shallots (scallions), aburaage (deep fried tofu) and fish cakes. I made the curry sauce from scratch and flavour is amazing. Omit meat and fish cakes and make it a vegetarian version of curry udon with konbu dashi stock.

Ingredients for Curry Udon Recipe

  • 1 Servings of fresh udon noodles
  • 2 Shallots
  • 1 stick Short chikuwa
  • 1/2 Aburaage
  • 75 gram Pork belly, thinly sliced into bite size pieces
  • 350 milliliter Dashi stock
  • 1/2 teaspoon Oil
  • As required Salt and pepper
  • 1/2 tablespoon Curry powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Cornflour/corn starch
  • 2.50 tablespoon Dashi or water
  • 1.50 tablespoon Soy sauce
  • 1 tablespoon Mirin
