Curried Apple Celery Soup Recipe

A wholesome creamed soup of apples and celery cooked with spice and milk. This is simultaneously hearty and light. It has plenty of protein so you're not hungry again an hour later, but doesn't feel like you've eaten a heavy stew. Recipe is very easily adaptable to vegetarian by using tofu for chicken and vegetable stock for the chicken broth. The apple celery soup is a delicious and refreshing soup that you can serve either hot or cold.

Ingredients for Curried Apple Celery Soup Recipe

  • 2 Celery stalks roughly chopped Nos
  • 2 Apple peeled and roughly chopped Nos
  • 1/2 cup Milk
  • 1/2 cup Vegetables stock
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Cinnamon powder
  • As required Salt and crushed black pepper

Directions: Curried Apple Celery Soup Recipe

step 1

  • STEP 1.Preheat a wok and add 1 tsp olive oil, add 2 apples peeled and diced, 2 celery stalks chopped, salt to taste and stir. Cover the pan and allow the apples and celery to steam for 3 to 4 minutes. The apples and celery will slightly soften. Turn off the heat.

step 2

  • STEP 1.Add the apples and celery into a blender jar with ½ tsp cinnamon powder, ½ tsp cumin powder, ½ cup vegetable stock, ½ cup milk. Blend well till smooth.

step 3

  • STEP 1.Celery soup is ready. Heat the soup before serving. Garnish with crushed black peppercorns.
