  • 250 gram Brinjals, Cut Into Small Pieces
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • as required A Few Curry Leaves
  • 1/2 cup Yogurt
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • As required Salt To Taste
  • as needed Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Wash and cut the brinjals into small pieces.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add the brinjals and sauté until they are cooked and tender.
  • STEP 4.In a separate bowl, whisk together yogurt, turmeric powder, red chili powder, and salt.
  • STEP 5.Add the yogurt mixture to the pan and cook for a few minutes until the gravy thickens.
  • STEP 6.Garnish with coriander leaves and serve hot with roti or rice.

Storage and Serving

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days.
