  • STEP 2.Heat oil in a large pot over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.
  • STEP 3.In the same pot, add the onions, bell peppers, and garlic. Cook until softened. Add the tomato paste and cook for another minute. Return the pork to the pot and add the chicken broth. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the pork is tender.

  • STEP 5.To serve, divide the barley among bowls. Top with the pork, avocado slices, cilantro, and a squeeze of lime juice. Enjoy!

Cooking Tips

  • For extra flavor, you can sear the marinated pork in a hot skillet before transferring it to the pot.
  • If you prefer a thicker stew, you can add a slurry of cornstarch and water to the pot during the last 10 minutes of cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop before serving.

Storage and Serving

  • This Cuban Pork Barley Bowl is a complete meal on its own, but you can also serve it with a side of black beans and plantains for a more traditional Cuban feast.
  • Garnish with additional cilantro and lime wedges for extra freshness.
  • This dish is great for meal prep. Divide the cooked barley, pork, and toppings into individual containers for easy grab-and-go lunches.
