A crispy crunchy mouth-watering preparation of thinly sliced pork deep fried and tossed with vegetables and a sweet and tangy sauce. The best ever Sweet and Sour Pork recipe is loaded with tricks the Chinese have been using for centuries: double dredge and double fry for extra crispy, cornflour instead of flour, economical pork used for juiciness, but tenderized with baking soda so you’d swear they’re pricey chops, and a sauce that’s not sickeningly sweet.

  • 350 gram Pork Loin
  • 0.88 teaspoon Salt
  • As required White or black pepper
  • 1/4 teaspoon Baking soda
  • 1.50 tablespoon Chinese cooking wine
  • As required Ingredients for coating and frying
  • 1/2 cup Cornflour
  • 3/4 cup Cornstarch
  • 1.25 cup Water
  • As required Soybean oil for deep frying
  • As required Ingredients for sweet and sour sauce
  • 1/4 cup Sugar
  • 2 tablespoon Water
  • 2 tablespoon Vinegar
  • 1 teaspoon Cornstarch
  • 2 teaspoon Water
  • As required Ingredients for vegetables
  • 2 Spring onion stalks
  • 2 No.s Garlic
  • 1/2 No.s Carrot
  • 1 No.s Capsicum

Directions: Crispy Sweet And Sour Pork Recipe

step 1

  • STEP 1.1 cut 350 gm pork loin in half and then slice against the grain to make 3 mm thick pieces.

step 2

  • STEP 2.2 place the meat in a bowl and add ½ tsp salt, white or black pepper to taste, ¼ tsp baking soda to tenderise the meat, 1 ½ tbsp chinese cooking wine. Mix well and rub between each slice to ensure that all the pieces are coated with the marinade. Let it marinate for 10 minutes.

  • STEP 3.3 in a bowl add ½ cup cornflour and dip each slice into the bowl and individually coat them the flour. Shake off the excess flour. keep aside.

  • STEP 4.4 in another bowl add ¾ cup cornstarch and 1 ¼ cup water. Stir until well combined and lump free.

step 5

  • STEP 5.5 add the coated meat into the bowl with the cornstarch water and mix it well. Then separate each slice, unfold it neatly and place it in a flat container.

  • STEP 6.6 heat soybean oil or any oil with a high smoking point to 380 degrees fahrenheit.

  • STEP 7.7 when the meat is added, one slice at a time, it will sink to the bottom and then rise back up to the surface. This indicates that the oil is at the right temperature.

step 8

  • STEP 8.8 do not crowd the wok as the pieces will stick to each other. To avoid this fry the pork in batches.

step 9

  • STEP 9.9 use chopsticks to keep flipping the pieces over so that they cook evenly. Do not cook for more than 2 minutes. take them out before they turn golden. Else the meat will be overcooked.

  • STEP 10.10 once all the meat is fried once, heat the same oil to 390 degrees fahrenheit for double frying.

step 11

  • STEP 11.11 add all the pieces back to the hot oil and fry for not more than 2 minutes. Flip them over and fry till just golden. Then take them out of the hot oil using a sieve to drain off the excess.

step 12

  • STEP 12.12 to make the sweet and sour sauce, add ¼ cup sugar to the wok. Add 2 tbsp water and stir. Then add 2 tbsp vinegar, ⅜ tsp salt, cornstarch water (1 tsp cornstarch + 2 tsp water).

step 13

  • STEP 13.13 continuously stir till the sugar melts and the consistency reaches that of a thin syrup.

step 14

  • STEP 14.14 introduce the pork back to wok and toss well with the sauce.

step 15

  • STEP 15.15 then add 2 pieces spring onion shredded, 2 garlic sliced, 1 pieces of carrot shredded and 1 piece capsicum shredded.

  • STEP 16.16 stir to cook the vegetables and toss well so that the sauce coats everything.

step 17

  • STEP 17.17 crispy sweet and sour pork is ready.
