STEP 1.1 in a large mixing bowl place 200 grated potatoes, 100 gm grated carrot, 1 egg, ½ tsp chinese five spice powder, 2 tbsp plain flour, salt to taste and mix well.

STEP 2.2 in a frying pan heat 2 tbsp oil on low to medium heat. Place a serving spoon of the mixture in the pan and make a hole in the centre of the mixture to make a ring.
step 3
STEP 3.3 break an egg in the hole and fry on low to medium heat for 2 minutes.
step 4
STEP 4.4 then gently turn the fritter over and fry on the other side for another 2 minutes.
step 5
STEP 5.5 remove from the pan and serve hot.
