Directions: Crispy Momos For Craving Moments: Recipe Inside

  • STEP 1.First, make your momo dough. Add plain flour and salt to a bowl, then gradually pour in the water while mixing. Keep kneading until you have a smooth, firm dough. Then add the oil and knead for another minute. Now, cover and rest the dough for 20–30 minutes.
  • STEP 2.Meanwhile, prepare your momo filling. Add chicken, cabbage, onion, spring onions, garlic, ginger, soy sauce, black pepper, chilli flakes, salt, and sesame oil to a bowl. Mix everything thoroughly until properly combined.
  • STEP 3.Now, divide your rested dough into small, equal portions and roll each one into a ball. Remember to roll each ball into a thin, evenly flat round shape, keeping the centre slightly thicker than the edges so the wrapper does not tear while filling.
  • STEP 4.Then place about 1 tablespoon of filling in the centre of each wrapper. Fold your edges over the filling and firmly pleat or pinch them to seal. Make sure there are no gaps, as loose momos can open during steaming.
  • STEP 5.Time to line your steamer basket lightly with oil or parchment. Now arrange your momos with a little space between each and steam over boiling water for about 12–15 minutes, or until the wrappers look slightly glossy and the chicken filling is completely cooked.
  • STEP 6.Now allow your steamed momos to cool for a few minutes. This short resting period helps the wrappers firm up, making them easier to fry without breaking.
  • STEP 7.After that, heat enough oil for deep frying in a heavy-bottomed pan over medium-high heat. Once the oil is hot, carefully lower the steamed momos into it in batches. Do not overcrowd the pan, as that can lower your oil temperature and leave the momos greasy.
  • STEP 8.Fry momos until their wrappers turn crisp and golden on all sides. Remember to turn them occasionally so that they colour evenly. Finally, remove momos with a slotted spoon and drain on a wire rack or kitchen paper.
  • STEP 9.Serve the crispy momos immediately with spicy red momo chutney, chilli-garlic sauce or a simple soy-chilli dip.
