  • 1/4 cup Cooked tomato puree
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Salt
  • 1.50 cup Rajma

  • 1 bunch Coriander leaves

Directions: Crispy Mexican Tacos With Refried Beans Recipe

step 1

  • STEP 1.To make the refried beans, in a preheated pan add 1 tbsp olive oil, 1 tsp grated garlic. Saute on low heat till the aroma of the garlic comes through.

  • STEP 1.Add ¼ cup cooked tomato puree, 1 tsp roasted cumin (jeera) powder, 1 tsp salt, 1 ½ cup soft cooked rajma (red kidney beans), tabasco sauce as desired. Stir to mix well and allow to fry for a few minutes.

  • STEP 1.Then using a potato masher mash the beans and tomato mix till a creamy texture is reached. Check for salt and spiciness and adjust accordingly.

  • STEP 1.Lastly add a small bunch of coriander leaves. Give it a stir and switch off the heat.

  • STEP 1.For the salad, thinly slice 1 onion, grate 2 carrots, 1 cup shredded lettuce. Toss together in a bowl. Add juice of ½ a lemon and salt to taste.

  • STEP 1.Bake, store bought tacos in the oven for 3 to 4 minutes.

  • STEP 1.Spoon the refried beans into the taco shell, next fill with salad and top with grated cheese. If desired more spicy sauce can be added over the filled taco.
