  • STEP 1.Preheat the oven to 325掳F (165掳C).
  • STEP 2.In a saucepan, heat the heavy cream and vanilla extract over medium heat until it starts to simmer. Remove from heat.
  • STEP 3.In a mixing bowl, whisk together the egg yolks and sugar until well combined. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
  • STEP 4.Add the espresso and stir until fully incorporated.
  • STEP 5.Divide the mixture evenly among ramekins or oven-safe dishes.
  • STEP 6.Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  • STEP 7.Bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.
  • STEP 8.Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or overnight.
  • STEP 9.When ready to serve, sprinkle a thin layer of sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until it forms a golden crust.
