Colocasia or let us call it by the indian term “arbi” is a starchy but delicious root vegetable in the world of food. It is at most used as a stir fry, dry subzi, in curries which are spiced and/or yogurt based. This recipe is taken from a 1996 femina magazine edition which had featured a contest using tomato puree. The gram flour is roasted well and when combined with mashed colocasia binds it into a very sticky mixture. On frying, it will not disintegrate in the oil giving you perfect balls.

  • As required For the Sauce
  • 1 medium tomatoes
  • 0.13 cup peas – If fresh boil in salted water for 10 minutes
  • 1/2 tablespoon Butter
  • 1/4 teaspoon ginger Garlic paste
  • 1/4 onion – chopped
  • 1/4 teaspoon chilli powder
  • As required Salt
  • 1/2 teaspoon Sugar
  • 0.38 teaspoon White pepper powder
  • 0.13 teaspoon nutmeg powder
  • 0.13 teaspoon cinnamon powder
  • 1/4 teaspoon clove Powder
  • 1/4 tablespoon chopped coriander – for garnish
  • As required For the Arbi Balls
  • 62.50 gram Arbi – boiled,peeled and mashed
  • As required I onion – chopped fine
  • 1/2 tablespoon peas – If fresh boil in salted water for 10 minutes
  • 1/2 tablespoon gram flour/garbanzo bean flour/besan
  • 1/4 Green chilli – finely chopped
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon Garam masala powder
  • 1/4 teaspoon turmeric powder
  • 0.06 teaspoon cumin Seeds
  • 0.06 teaspoon ginger Paste
  • As required Salt
  • 1/2 tablespoon oil to fry plus
