How to Make Coconut Soup Recipe

STEP 01

Bruise the lemongrass, cut the end as it is the part, remove the outer paster as well and start slicing them and then Peel and slice the shallots, galangal, and chop the thai green chili.

Quarter about 1cup of mushrooms and 500gm of breast boneless chicken, wash and quarter them.

Now in a saucepan add 3-4 tbsp olive oil, and add all the sliced vegetables. Stir them for about 3-5 minutes. Once the flavor of the veggies enhances add 4 cups of full-fat coconut milk and 2 cups of chicken broth.

Give them a good stir and then add 4-5 kaffir lime leaves (crushing them a little). Bring it up to high heat, once it starts boiling, reduce the flame to low heat and let it simmer for 30-45 minutes.
