Rice and meats traditionally cooked in a claypot with a drizzling sauce.This clay pot chicken rice is so addictive! Beyond the greatness of the tender and moist chicken, the rice absorbs all the extract from the mushrooms and chicken grease, and is then seasoned with oyster sauce.

Ingredients for Claypot Rice Recipe

  • As required Sesame oil to brush claypot
  • 1/2 cup Rice
  • 3/4 cup Water /chicken stock
  • 80 gram Chinese bacon finely chopped
  • 50 gram Chinese sausage finely chopped
  • 25 gram Dried shrimp finely chopped
  • 1 teaspoon Sesame oil to make rice crisp
  • 1 Egg Nos
  • 2 Spring onions finely chopped for garnish Nos
  • 1 Fresh red chili thinly sliced for garnish Nos
  • 2 sprig Coriander finely chopped for garnish
  • As required Ingredients for drizzling sauce
  • 1 tablespoon Water
  • 1 tablespoon Soy sauce
  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Chili sauce

Directions: Claypot Rice Recipe

step 1

  • STEP 1.1 wash and soak ½ cup rice for 30 minutes.

step 2

  • STEP 2.1 heat a frying pan and add 1 tsp vegetable oil, and add 80 gms chopped chinese bacon, 50 gms chopped chinese sausage, 25 gms chopped dried shrimp. Cook for 3 minutes. Turn off the heat.

  • STEP 3.2 brush the inside of the claypot with sesame oil so that the rice will not stick to the bottom. Heat the clay pot

  • STEP 4.3 add ½ cup soaked rice to the pot, add ¾ cup water or chicken stock and stir.cover and let it cook on medium heat till the rice absorbs all the liquid

  • STEP 5.4 to make the drizzling sauce, in a bowl add 1 tbsp water, 1 tbsp soy sauce, 1 tbsp oyster sauce and1 tbsp chili sauce. Mix together.

  • STEP 6.5 when the rice is almost done, turn the heat to low and quickly add the sauted meats and the drizzling sauce and cover and let it continue to cook for another 3 to 5 minutes.

  • STEP 7.6 at this stage pour 1 tsp sesame oil along the edge of the rice. Cover and continue to cook on low heat.

step 8

  • STEP 8.7 when a little smoke begine to escape the pot, turn off the heat. This indicate that the rice is getting crispy at the bottom.

step 9

  • STEP 9.8 open the cover and crack the egg onto the top of the meats. Cover and let the egg cook in the steam of the dish. This is optional.

step 10

  • STEP 10.9 garnish with chopped coriander, spring onions and red chilli.
