  • 0.40 tablespoon Olive Oil Divided
  • 0.80 cup Chicken broth + 2 cups water
  • 0.30 piece Medium yukon potatoes peeled and sliced into bite sized
  • 1/5 Carrots peeled and thinly sliced
  • 1/5 Celery ribs trimmed and finely chopped
  • 1/10 Small red bell pepper finely chopped, optional
  • 1/10 Medium Onion Finely Chopped
  • 0.40 tablespoon Ketchup or 3 tbsp tomato sauce
  • 1/10 can White cannelini beans with their juice
  • 1/5 Bay leaves
  • 1/5-0.30 tablespoon White vinegar or to taste
  • 1/10 teaspoon Sea salt or to taste
  • 0.03 teaspoon Black pepper freshly ground
  • 1/10 Large garlic clove pressed
