  • 50 gram Chorizo Sausage, Casing Removed
  • 12.50 gram Breadcrumbs
  • 1/2 tablespoon Chopped Fresh Parsley
  • 1/4 teaspoon Paprika

Cooking Directions

  • STEP 1.Place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce the heat and simmer for 6 minutes. Drain and cool under cold running water.
  • STEP 2.Peel the eggs and set aside. In a bowl, mix together the chorizo, breadcrumbs, parsley, and paprika. Divide the mixture into 4 equal portions.
  • STEP 3.Flatten each portion of the chorizo mixture in your hand, then wrap it around one of the boiled eggs, ensuring it is completely covered. Repeat with the remaining eggs and chorizo mixture.
  • STEP 4.Heat the oil in a deep fryer or large saucepan to 180°C (350°F). Carefully lower the scotch eggs into the hot oil and fry for 4-5 minutes, or until golden and crispy. Remove with a slotted spoon and drain on kitchen paper.
  • STEP 5.Serve the Chorizo Scotch Eggs warm or at room temperature, with a side of your favorite dipping sauce.
