Ingredients for Choo Chee Recipe

  • As required For Choo Chee
  • 2 mackerel fillets
  • 2 tablespoon 3 red curry paste
  • 1/4 cup 0.6666666666666666 cup coconut milk
  • 1 teaspoon palm sugar, finely chopped
  • 1 As required 2 tsp fish sauce
  • 3 kaffir lime leaves, center rib removed, finely julienned
  • As required Spur chilies or red bell pepper, finely julienned for garnish
  • 1 tablespoon 2 extra coconut milk for garnish

Directions: Choo Chee Recipe

step 1

  • STEP 1.Cut and wash the fish, slightly cut them so that the curry will get in simply.

step 2

  • STEP 1.Add 1/4 cup of the coconut milk to a cooking pan or a saute pan wide enough to carry the fish and convey to a boil. Add curry paste and cook by stirring occasionally and reduce it till thick and till the oil starts separating from the paste.

  • STEP 1.Add the remaining coconut milk, palm sugar, and fish sauce; stir to combine and simmer till the sauce has thickened to the required consistency. When its done add the kaffair leaves to it and let them infuse.

  • STEP 1.Pat the fish dry and add oil to a large pan to coat the base of the pan and heat it over medium-high heat. Once the oil becomes hot enough add fish to the pan and cook well from both the sides until it becomes golden brown.

step 5

  • STEP 1.Remove from heat and transfer the fish onto a serving plate. Pour the sauce around the fish, and serve hot.
