  • 1/4 teaspoon Coriander Powder
  • As required Salt To Taste

Cooking Directions

  • STEP 1.Roast the eggplant and potatoes until they are soft and charred.
  • STEP 2.Peel the skin off the roasted vegetables and mash them together.
  • STEP 3.In a pan, heat oil and add cumin seeds, onions, and garlic. Cook until onions are golden brown.
  • STEP 4.Add tomatoes, green chilies, and spices. Cook until the tomatoes are soft and mushy.
  • STEP 5.Add the mashed vegetables to the pan and mix well. Cook for a few minutes.
