How to Make Chironje Makhane Ki Kheer Recipe

step 1

STEP 01

Preheat a pan and add 1 tsp ghee, 1 cup makhane (lotus seed). Roast on low heat for a few minutes till brown and crunchy.

In a chopper coarsely grind half the quantity of roasted makhane, to a coarse texture. Keep aside.

STEP 01

In a pan bring 1 litr milk to a boil. Then reduce and simmer for 15 minutes to thicken and partially reduce the milk. Stirring intermittently.

Next add ¼ cup sugar and both the makhane, the whole and the coarsely ground.

STEP 01

Simmer for 5 to10 minutes till the makhanas are well soaked and the kheer becomes thick. Then add a few strands of saffron, 1 stick of cinnamon and simmer for 3 to 4 minutes.

In a preheated pan add 1 tsp ghee, ¼ cup chironji and roast on low heat till lightly brown. Then add 1 tbsp sliced almond, ¼ cup raisins and saute for 1 to 2 minutes.

Once the nuts are roasted, add half the amount to the kheer and bring to a boil for a few minutes.

STEP 01

Serve the kheer in a bowl and garnish with the rest of the roasted nuts and raisins.
