Chironje Makhane Ki Kheer Recipe

A festive kheer made from makhana (lotus seeds) and flavoured with chironji, nuts and spices. Chironji And Makhane Ki Kheer is a delicious recipe which you can serve after your everyday meals. Serve it after your delicious festive meal of Jodhpuri Aloo, Ajwain Puri, Satvik Carrot Sprout Salad and Mirchi Ka Chunda.

Ingredients for Chironje Makhane Ki Kheer Recipe

  • As required Ingredients for kheer
  • 2 teaspoon Ghee
  • 1 cup Makhana
  • 1 liter Milk
  • 1/4 cup Sugar
  • As required Saffron strands A few
  • 1 No.s Cinnamon stick
  • As required Ingredients for garnish
  • 1/4 cup Chironji
  • 2 tablespoon Sliced almonds
  • 1/4 cup Raisina

Directions: Chironje Makhane Ki Kheer Recipe

step 1

  • STEP 1.Preheat a pan and add 1 tsp ghee, 1 cup makhane (lotus seed). Roast on low heat for a few minutes till brown and crunchy.

step 2

  • STEP 1.In a chopper coarsely grind half the quantity of roasted makhane, to a coarse texture. Keep aside.

step 3

  • STEP 1.In a pan bring 1 litr milk to a boil. Then reduce and simmer for 15 minutes to thicken and partially reduce the milk. Stirring intermittently.

  • STEP 1.Next add ¼ cup sugar and both the makhane, the whole and the coarsely ground.

  • STEP 1.Simmer for 5 to10 minutes till the makhanas are well soaked and the kheer becomes thick. Then add a few strands of saffron, 1 stick of cinnamon and simmer for 3 to 4 minutes.

  • STEP 1.In a preheated pan add 1 tsp ghee, ¼ cup chironji and roast on low heat till lightly brown. Then add 1 tbsp sliced almond, ¼ cup raisins and saute for 1 to 2 minutes.

  • STEP 1.Once the nuts are roasted, add half the amount to the kheer and bring to a boil for a few minutes.

step 8

  • STEP 1.Serve the kheer in a bowl and garnish with the rest of the roasted nuts and raisins.
