Directions: Chipotle Grilled Pork Chops With Grilled Apricot Salsa Recipe

Cooking Directions

  • STEP 1.In a blender, combine chipotle peppers, garlic, lime juice, olive oil, salt, and pepper to make the marinade.
  • STEP 2.Place the pork chops in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
  • STEP 3.Preheat the grill to medium-high heat. Remove the pork chops from the marinade and discard the excess marinade.
  • STEP 4.Grill the pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F.
  • STEP 5.While the pork chops are grilling, prepare the apricot salsa. Cut the apricots in half and remove the pits. Grill the apricots for about 2-3 minutes per side, until they are slightly charred.
  • STEP 6.Dice the grilled apricots and combine them with red onion, jalapeno, cilantro, lime juice, salt, and pepper to make the salsa.
  • STEP 7.Serve the grilled pork chops with the grilled apricot salsa on top. Enjoy!

Cooking Tips

  • For extra smoky flavor, you can add a teaspoon of smoked paprika to the marinade.
  • Make sure to let the pork chops rest for a few minutes before serving to allow the juices to redistribute.
  • If you don't have a grill, you can also cook the pork chops on a stovetop grill pan or in the oven.
  • Feel free to adjust the spiciness of the marinade and salsa by adding more or less chipotle peppers and jalapenos.

Storage and Serving

  • Leftover grilled pork chops can be stored in an airtight container in the refrigerator for up to 3 days.
  • The apricot salsa can be stored in a separate container in the refrigerator for up to 5 days.
  • To serve, reheat the pork chops in a preheated oven at 350°F for about 10 minutes, or until heated through.
  • Serve the reheated pork chops with the chilled apricot salsa on top.
