STEP 1.1 place 2 medium size potatoes cut into bite size pieces in a saucepan of water and boil for 20 minutes till soft.

STEP 2.2 then drain and mash the potato.

STEP 3.3 cut the ends of 2 onions and keep aside. Cut the rest of the onion into rings.

STEP 4.4 separate the onion rings, place them in a bowl and dust them with 1 tbsp cornflour.

STEP 5.5 to the bowl of mashed potato add finely chopped reserved ends of the onion, 1 finely chopped carrot, 1 finely chopped green chili pepper, 2 finely cubed cooked sausages, 1 tsp black pepper and salt to taste and mix well together.

STEP 6.6 if mixture is too runny mix in 1 tbsp corn flour.

STEP 7.7 heat 2 tbsp oil in a frying pan on medium heat, place the onion rings in the hot oil. Spoon 1 ½ tbsp potato mixture inside each ring.

STEP 8.8 fry on medium low heat for 5 minutes on each side till golden. Then remove from the pan.
step 9
STEP 9.9 transfer to a dish and serve.
