  • 400 gram Cod fillet
  • 400 gram Monkfish
  • 3 No.s Red chilli
  • 2 No.s Shallots
  • 1 tablespoon Fish sauce
  • 1/2 No.s Lime
  • 1 No.s Leek
  • 1 No.s Celery stick
  • 1 pinch Saffron
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 2 Curry powder t bsp
  • 1 No.s Spring onions
  • 1 tablespoon Sugar
  • 1 piece Galangal
  • 1 No.s Lemon grass
  • 2 No.s Garlic Cloves
  • 1 tablespoon Tomato puree
  • 450 milliliter Coconut milk
  • bunch Coriander A

Directions: Chinese Style Coconut Fish Curry Recipe

step 1

  • STEP 1.1 in a wok heat 2 tbsp oil, add 1 thinly sliced celery stick, 1 thinly sliced leek and stir fry till soft.

step 2

  • STEP 2.2 add sliced 2 cloves chopped garlic, 3 chopped red chillies, 2 sliced shallots and fry for 1 minutes.

step 3

  • STEP 3.3 add 1 tbsp tomato puree and fry for1 minute.

step 4

  • STEP 4.4 add 1 tsp turmeric powder, 1 tsp coriander powder, 2 tbsp curry powder and fry for a few seconds.

  • STEP 5.5 then add 750 ml boiling water to the wok, 1 cm thinly sliced galangal, 1 lemon grass cut into lengthwise quarters, a few strands of saffron, 1 tbsp fish sauce and simmer for 10 minutes on medium heat.

step 6

  • STEP 6.6 then add 450 ml coconut milk, 1 tbsp sugar and simmer for 5 minutes.

step 7

  • STEP 7.7 add 400 gm monkfish, 400 gm cod fillet chopped into 1 inch chunks, add small bunch coriander roughly chopped, 1 chopped spring onion and simmer for 5 minutes till fish is cooked.

step 8

  • STEP 8.8 squeeze juice of ½ lime over the curry and gently stir. Turn off the heat. Transfer to a dish and serve.
