How to Make Chinese Style Coconut Fish Curry Recipe

STEP 01

1 in a wok heat 2 tbsp oil, add 1 thinly sliced celery stick, 1 thinly sliced leek and stir fry till soft.

STEP 02

2 add sliced 2 cloves chopped garlic, 3 chopped red chillies, 2 sliced shallots and fry for 1 minutes.

STEP 03

3 add 1 tbsp tomato puree and fry for1 minute.

STEP 04

4 add 1 tsp turmeric powder, 1 tsp coriander powder, 2 tbsp curry powder and fry for a few seconds.

STEP 05

5 then add 750 ml boiling water to the wok, 1 cm thinly sliced galangal, 1 lemon grass cut into lengthwise quarters, a few strands of saffron, 1 tbsp fish sauce and simmer for 10 minutes on medium heat.

STEP 06

6 then add 450 ml coconut milk, 1 tbsp sugar and simmer for 5 minutes.

STEP 07

7 add 400 gm monkfish, 400 gm cod fillet chopped into 1 inch chunks, add small bunch coriander roughly chopped, 1 chopped spring onion and simmer for 5 minutes till fish is cooked.

STEP 08

8 squeeze juice of ½ lime over the curry and gently stir. Turn off the heat. Transfer to a dish and serve.
