Ingredients for Chinese Pumpkin Stew Recipe

  • 1 inch Pumpkin, peeled and cut into s 500 gm
  • 3 Potato medium cut into bite size chunks Nos
  • 4 stick Celery thinly sliced Nos
  • 4 Garlic cloves finely chopped Nos
  • 1 Ginger finely chopped cm
  • 4 Red chili peppers thinly sliced Nos
  • 2 Spring onions roughly chopped Nos
  • 1 teaspoon Ground red peppers
  • 4 tablespoon Soy sauce
  • bunch Coriander roughly chopped A
  • 1 Red onion roughly chopped Nos
  • 150 milliliter Chicken or vegetable stock
  • 2 tablespoon Sugar
  • As required Salt
  • 3 tablespoon Oil

Directions: Chinese Pumpkin Stew Recipe

step 1

  • STEP 1. heat 3 tsp oil in a wok and add 4 cloves finely chopped garlic, 1 cm finely chopped ginger and 1 tsp ground red peppercorn. Fry for a few seconds till fragrant.

step 2

  • STEP 1. add 3 medium potatoes cut into bite size chunks and fry for 1 minute.

  • STEP 1. then add 500 gm pumpkin peeled and cut into 1 inch pieces and mix together.

  • STEP 1.fry for 1 minute. add 4 tsp soy sauce to the wok. Mix well and fry for 3 to 5 minutes.

  • STEP 1. add150 ml chicken or vegetable stock and bring to a boil.

step 6

  • STEP 1. cover and cook on medium heat for 30 minutes.

step 7

  • STEP 1. then remove the lid and add 2 tsp sugar, salt to taste. Mix well together.

  • STEP 1. next add 1 roughly chopped red onion, 4 thinly sliced celery stalks, 4 thinly sliced red chili peppers.

step 9

  • STEP 1. gently stir for another 2 minutes. Turn off the heat.

step 11

  • STEP 1. lastly add 1 small bunch of coriander leaves roughly chopped and 2 spring onions roughly chopped.

step 12

  • STEP 1. chinese pumpkin stew is ready. serve hot.
