Chilled cubes of pork jelly served topped with a tasty mixed sauce flavoured with garlic, vinegar, pepper and soy sauce.An aspic dish made from pork rind and its spiced stock, Chinese pork rind jelly is scrumptious and very simple to prepare. It makes a great salad with spicy dressing. You can also use it in soup dumplings.

Ingredients for Chinese Pork Jelly Recipe

  • 1 kilogram Pork skin
  • 4 No.s Garlic Cloves
  • 1 No.s Spring onion
  • 1/2 teaspoon Ground white pepper
  • 3 tablespoon Light soy sauce
  • 1.50 tablespoon Dark soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoon Vinegar

Directions: Chinese Pork Jelly Recipe

step 1

  • STEP 1.1 in a mixing bowl add 4 finely chopped cloves of garlic, 1 finely chopped spring onion, 3 tbsp light soy sauce, 2 tbsp vinegar, 1 tbsp sesame oil, ½ tsp ground white pepper, salt to taste and mix together. Set aside.

  • STEP 2.2 place1 kg pork skin in a large pot, cover with water and bring to a boil.

  • STEP 3.3 boil for 5 minutes. Then remove and leave to cool.

  • STEP 4.4 remove the white fat from the skin and cut the skin into thin strips.

step 5

  • STEP 5.5 then rinse the skin strips with warm water and drain in a sieve.

  • STEP 6.6 place the pork skin in a large pan, add 2 ltr water and bring to the boil.

step 7

  • STEP 7.7 then turn the heat to low, cover and cook till the liquid turns milky in colour.

step 8

  • STEP 8.8 turn off the heat, remove the skin and strain the liquid into a deep dish.

step 9

  • STEP 9.9 refrigerate overnight to set.

step 10

  • STEP 10.10 once set, cut the cloudy jelly into ½ cm thick slices.

step 11

  • STEP 11.11 arrange on a plate, spoon the prepared sauce over the jelly pieces, garnish with chopped coriander and serve.
