  • As required Ingredients for the pork
  • 300 gram Pork Loin
  • 1/2 tablespoon Soy sauce
  • 2 teaspoon Chinese cooking wine
  • 1/4 teaspoon Baking soda
  • 1/4 teaspoon White paper
  • 0.13 teaspoon Salt
  • 1 tablespoon Cornstarch
  • 2.50 tablespoon Oil
  • As required Ingredients for Peking sauce
  • 2.50 tablespoon Sweet bean paste
  • 2 teaspoon Soy sauce
  • 1 teaspoon Grated garlic
  • 1 teaspoon Grated ginger
  • 3 tablespoon Water
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch
  • As required Chopped cucumber for serving
  • As required Chopped scallion for serving

Directions: Chinese Peking Sauce Pork Recipe

step 1

  • STEP 1. cut 300 gm pork loin into thin strips and place it in a bowl.

step 2

  • STEP 1. add ½ tsp soy sauce, 2 tsp chinese cooking wine, ¼ tsp baking soda, ¼ white paper, ⅛ tsp salt and 1 tsp cornstarch. Mix well to ensure that all the pieces of pork are coated. Let it marinate for 20 minutes.

step 3

  • STEP 1. for the sauce, in a bowl add 2 ½ tsp of sweet bean paste, 2 tsp soy sauce, 1 tsp grated garlic ,1 tsp grated ginger, 3 tsp water, 1 tsp sugar and 1 tsp cornstarch. Mix well together to make a smooth paste.

  • STEP 1. heat the wok until smoking and add 2 ½ tsp oil. Swirl to cover the entire surface of the hot wok.

step 5

  • STEP 1. add the marinated pork strips and spread them out so that all the pieces are touching the hot wok and let it cook for about 20 seconds without flipping. If the meat is flipped over too early it will stick to the wok.

step 6

  • STEP 1. then stir fry the pork till it is slightly golden. Take it out of the wok using a slotted spoon to allow the excess oil to drain back into the wok. Set it aside.

  • STEP 1. there will be oil left in the wok. If not, add a little more oil.

  • STEP 1. to this add the prepared sauce mixture and stir on medium heat for a few minutes, till the sauce thickens slightly.

step 9

  • STEP 1. at this stage add the fried pork strips back to the wok and mix till the sauce coated the pork well.

step 10

  • STEP 1.take it out of the wok and serve it on a bed of cucumber strips. Top with thinly sliced scallion.

step 11

  • STEP 1. serve hot with rice or noodles.
