Ingredients for Chinese Drunken Chicken Recipe

  • 2 No.s chicken legs
  • 2 cup Water
  • 2 piece Ginger
  • 1/2 teaspoon Salt
  • As required The Brine
  • 1.50 homemade chicken broth
  • 1.50 cup shaoxing huadiao wine
  • 1 teaspoon Sugar
  • 2 teaspoon sea salt
  • 1 tablespoon dried goji berries/wolfberries

step 1

  • STEP 1.1. In a small pot, take chicken bowls, add water and ginger.  bring to a boil and simmer for about 1 hour. Need 2 cups of chicken broth.

  • STEP 2.2. Rinse off the de boned chicken and pat thoroughly dry with a paper towel. Lay a piece of chicken on an aluminum foil and sprinkle with salt.

  • STEP 3.3. Wrap the chickens into a roll, seal both the ends.

  • STEP 1.4. Steam the chicken in the foil over high heat for 20 minutes, covered. Turn off the heat and let the chicken sit in the steamer for another 5 minutes with the lid tightly closed.

  • STEP 1.5. Transfer the foil wrapped chicken to an ice bath and let it sit there for 10-15 minutes. Let it cool down.

  • STEP 1.6. Now to make brine, in a pan take 2 cups of chicken broth,2 cups of shaoxing wine,sugar,salt and goji berries.

  • STEP 4.4.once the chicken is cool, unwrap the chicken and place in the brine. Cover and refrigerate for 24 hours.

  • STEP 5.Slice and serve cold at room temperature .
