A quick and easy fried rice with chicken, egg and vegetables flavoured with garlic and seasoned with soy sauce.A great way to use up leftovers, this easy Chinese fried rice uses cold, pre-cooked white rice, chicken tenders, frozen vegetables and eggs. Toss it all together with ginger and soy sauce and you’ve got a takeout-style dinner that’s easy enough for even the busiest of weeknights.

Ingredients for Chinese Chicken Fried Rice Recipe

  • 150 piece Chicken cut into bite size gms
  • 1 teaspoon Corn flour
  • 1 teaspoon Soy sauce
  • 1 teaspoon Oil
  • 1 pinch Baking soda
  • As required Ingredients for fried rice
  • 150 piece Chickencut into bite size grams
  • 2 No.s Eggs
  • 1 tablespoon Oil
  • As required oil for frying chicken
  • 1 tablespoon Minced Garlic
  • 1/4 cup Onion Chopped
  • 1 cup Green Peas
  • 1/2 cup Carrot
  • 2 cup Cooked Rice
  • 1 tablespoon Light soy sauce
  • 2 teaspoon Dark soy sauce
  • As required Salt and pepper
  • 1/4 cup Spring onions for garnish

Cooking Directions

  • STEP 1.In a mixing bowl add 150 gms chicken cut into bite size pieces. Add1 tsp corn flour, 1 tsp soy sauce, 1 tsp oil and a pinch of baking soda. Mix well till the chicken is well coated. Set it aside to marinate.
  • STEP 2.In a bowl, crack 2 eggs and beat well.
  • STEP 3.Heat a wok or a large saute pan. Add 1 tbsp oil and swirl so that the bottom is well coated. Wait till the wok smokes.
  • STEP 4.Then pour in the egg, it will take 30 to 50 seconds for it to become fluffy. Stir and break it up into smaller pieces. Remove from the wok and set it aside.
  • STEP 5.Add more oil into the same wok and let it heat. Add the marinated chicken and saute for 1 to 2 minutes till the chicken changes colour and gets some dark spots. Set it aside.
  • STEP 6.In the same leftover oil in the hot wok add 1 tbsp minced garlic, ¼ cup chopped onion, 1 cup green peas, ½ cup chopped carrot. Stir fry for 2 to 3 minutes till onions are transparent. Add salt to taste.
  • STEP 7.Add the cooked chicken and toss together. Remove from the wok and set aside.
  • STEP 8.Turn the heat to high and add 2 tbsp oil. Add 2 cups of cooked rice and use a spatula to break up any lumps. Stir fry for 3 to 5 minutes. Then add 1 tbsp light soy sauce, 2 tsp dark soy sauce. Mix it well to evenly coat the rice so no white rice is visible. Mix it quickly before the sauce evaporates in the hot wok.
  • STEP 9.Next add the cooked vegetables and chicken and egg. Toss everything together and stir fry for a few minutes for flavours to blend. Add salt and pepper to taste.
  • STEP 10. Add ¼ cup chopped spring onion right before serving.
  • STEP 11. Chinese chicken fried rice is ready.
