Ingredients for Chinese Chicken And Sweet Potato Recipe

  • 6 piece Chicken drumsticks cut into bite size
  • 500 piece Sweet potato peeled and cut into bite size gm
  • 3 No.s Spring onions finely chopped
  • 10 gram Ginger finely chopped
  • 2 tablespoon Oyster Sauce
  • 2 tablespoon Light soy sauce
  • 2 tablespoon Cooking wine
  • 1 tablespoon Dark soy sauce
  • As required Salt
  • 1/2 liter Oil for deep frying

  • STEP 1.Cut knuckles off 6 chicken drumsticks.

  • STEP 2.Cut each drumstick into bite size pieces.

step 3

  • STEP 3.Fill a large bowl with cold water and place the chicken pieces in the water. Leave to soak for 20 minutes.

  • STEP 4.Then remove from the water and squeeze to drain out excess water. Keep aside. Discard water.

  • STEP 5.1 in a large mixing bowl add the chicken pieces, add 1 tbsp cooking wine and salt to taste. Mix together and leave to marinate for 10 minutes.

  • STEP 6.2 in a wok heat ½ ltr oil. When hot add 500 gm sweet potato peeled and cut into bite size pieces.

  • STEP 7.3 deep fry for 5 minutes till the potato is cooked through and golden.

  • STEP 8.4 keep the wok on the heat, use a slotted spoon to remove the potatoes and place them on a kitchen paper towel to drain off the excess oil.

  • STEP 9.5 in the same hot oil add the marinated chicken pieces and deep fry for 5 minutes. Stir gently.

  • STEP 10.6 then remove from the oil and drain, using a slotted spoon. Keep aside.

  • STEP 11.7 pour out the oil into another container and retain only 1 tbsp oil in the wok.

  • STEP 12.8 heat the oil, add 10 gm finely chopped ginger and 1 finely chopped spring onion. Stir fry till aromatic.

  • STEP 13.9 add the chicken drumsticks to the wok and mix well. Stir fry for 1 minute.

  • STEP 14.10 then add 2 tbsp light soy sauce, 2 tbsp oyster sauce, 1 tbsp cooking wine.

  • STEP 15.11 stir fry for 3 to 5 minutes till chicken is well coated with the sauces.

  • STEP 16.12 then add 500 to 800 ml of water. Ensure that the water level just covers the chicken pieces.

  • STEP 17.13 bring to a boil and then cover the wok.

  • STEP 18.14 turn the heat to low and cook for 10 minutes till the meat is tender.

  • STEP 19.15 then turn the heat to high to reduce the liquid and add the fried sweet potatoes.

  • STEP 20.16 stir the potatoes in with the chicken and sauce and cook for 2 minutes.

step 23

  • STEP 21.17 lastly add 1 chopped spring onion, salt to taste and stir. Turn off the heat.

step 24

  • STEP 22.18 transfer to dish and serve.
