Ingredients for Chinese Chicken And Mushroom Stew Recipe

  • 1 piece Small whole chicken broken down and cut into bite size Nos
  • 50 gram Dried hazel mushrooms
  • 50 gram Ginger finely chopped
  • 2 Spring onion finely chopped Nos
  • 30 gram Coriander finely chopped
  • 1 tablespoon Sugar
  • 2 tablespoon Soy sauce
  • 3 Dried red chilli roughly chopped Nos
  • 1 Star anise Nos
  • 1 teaspoon Red peppercorns
  • As required Salt

step 1

  • STEP 1.1 soak 50 gm dried hazel mushrooms in 500ml warm water for 4 to 6 hours.

step 2

  • STEP 2.2 strain and squeeze the mushrooms.

step 3

  • STEP 3.3 keep the mushrooms aside and retain the soaking liquid.

step 4

    step 5

    • STEP 4.1 heat 2 tbsp of oil in a wok and add 1 tbsp sugar. Stir continuously on medium heat till sugar melts and turns brown.

    step 6

    • STEP 5.2 add1 small whole chicken, broken down and cut into bite size pieces. Stir fry till golden brown.

    step 7

    • STEP 6.3 add 50 gm finely chopped ginger,3 roughly chopped dried red chillies, 2 tbsp soy sauce, 1 star anise, 1 tsp red peppercorns and stir fry for 5 minutes.

    • STEP 7.4 to this add 50 gm soaked and strained hazel mushrooms and stir fry for 2 minutes.

    step 9

    • STEP 8.5 transfer all the contents of the wok to a stewing pan, add 500 ml of the mushroom soaking liquid and bring to a boil.

    step 10

    • STEP 9.6 turn the heat to medium, cover and cook for 35 minutes.

    step 11

    • STEP 10.7 after 35 minutes, add salt to taste, 2 finely chopped spring onions and 30 gm finely chopped coriander leaves and stir together well.

    step 12

    • STEP 11.8 transfer to a dish and serve hot.
