300 gram Carrots cut into thin threads
3 No.s Eggs
2 Spring onions white part finely chopped and roughly chopped green part each
3 Garlic finely chopped cloves
1 Red chilli thinly sliced Nos
1 tablespoon Light soy sauce
As required Salt
2 tablespoon Oil

STEP 1.1 break 3 eggs into a mixing bowl and whisk well.

STEP 2.2 heat 1 tsp of oil in a wok or pan over medium heat.

STEP 3.3 add the egg mixture and cook slowly stirring occasionally. When fried, cut or break into small pieces with the spatula. Remove and keep aside.
