A delicious preparation of beef slow cooked with tomatoes and mushrooms.Traditional braises usually call for the meat to be browned first to seal in the juices, but here that step is skipped so it can absorb the wonderful taste of mushrooms, which completely permeate the sauce. If you find them, chanterelle mushrooms can be used in place of the shiitakes. Serve with whole-wheat egg noodles or spaetzle and a mixed green salad.

  • 300 gram Sirloin or fillet steak
  • 60 gram Mushrooms
  • 2 No.s Tomatoes
  • 10 gram Ginger
  • 2 No.s Spring onions
  • 3 No.s Bay leaves
  • 6 gram Cinnamon
  • 2 tablespoon Tomato Sauce
  • 20 gram Coriander
  • 1 teaspoon Ground white pepper
  • As required Salt

  • STEP 1.place 80gm whole tomatoes in a bowl and cover with boiling water.
  • STEP 1.once the skins loosen, peel them off and cut the tomatoes into bite size pieces.
  • STEP 2.place 300 gm beef sirloin or fillet steak cut into bite size pieces in a saucepan. Add 10 gm finely chopped ginger, 6m cinnamon stick, 3 bay leaves, white part of 2 spring onions , 600 ml cold water and bring to a boil. then turn the heat to low and cover. Cook for 30 minutes.in a wok heat 1 tsp oil, add the cut tomato and fry for 20 seconds.
  • STEP 3.transfer the boiled beef and liquid from the saucepan to just cover the level of the beef pieces. add 60 gm mushrooms halved, 2 tsp tomato sauce, 1 tsp ground white pepper and salt to taste and bring to a boil. then turn the heat to medium and cook for 10 minutes.
  • STEP 4.add 20 gm finely chopped coriander and stir. remove bay leaves and cinnamon stick and serve hot.
