A simple and tasty stir fry of crunchy asparagus and scrambled eggs flavoured with ginger garlic, spring onions and white wine vinegar.The trick to perfect fried rice is to use cold cooked rice (like leftover takeout) and stir-fry it long enough so that each grain dries out and puffs up. As with any stir-fry, make sure all your ingredients are ready to go before you fire up the pan.

  • 250 gram Asparagus
  • 4 No.s Eggs
  • 3 No.s Garlic Cloves
  • 5 gram Ginger
  • 1 teaspoon White wine vinegar
  • As required Salt

Directions: Chinese Asparagus And Egg Stir Fry Recipe

step 1

  • STEP 1.1 break 4 eggs into a bowl and whisk together.

step 2

  • STEP 2.2 in a wok heat 1 tbsp oil till smoking, add the whisked eggs and stir fry for 2 minutes till well scrambled. Then remove and keep aside.

step 3

  • STEP 3.3 in the same wok heat another1 tbsp oil, add 5 gm finely chopped ginger, 3 finely chopped cloves of garlic and stir fry for a few seconds.

step 4

  • STEP 4.4 then add 250 gm asparagus cut into 2 cm pieces and stir fry for 2 minutes.

step 5

  • STEP 5.5 add the scrambled egg back to the wok, add 1 tsp white wine vinegar and stir fry for 1 minute.

step 6

  • STEP 6.6 add salt to taste, stir and the transfer to a dish to serve.
