  • 1 Thai eggplants, chopped

  • 1/4 bunch Snake beans, cut into 5cm pieces
  • 0.13 cup Thai Basil Leaves
  • 1/2 Kaffir lime leaves, shredded
  • As required Coconut cream and fried eschalots, to serve
  • As required Chilli jam
  • 1/2 tablespoon Peanut oil
  • 1 Long red chillies, sliced thinly with seeds
  • 3/4 Eschalots, chopped
  • 3/4 Cloves Garlic, Chopped
  • 1/4 teaspoon Belachan/kapi
  • 0.19 teaspoon Crushed white pepper
  • 1/2 tablespoon Palm sugar
  • 1/2 tablespoon Fish sauce
  • 0.06 cup Rice vinegar
