Chilli Chicken Recipe

Chilli chicken is an Indian-Chinese dish with Hakka Chinese heritage. Nelson Wang, who was a Chinese immigrant in Kolkata, has been credited with the invention of chicken manchurian, which is very similar to chilli chicken. Kolkata’s first Chinese restaurant, Nanking, was opened in 1924. Other such restaurants followed and before long the cuisine had spread to other cities like Mumbai, from its starting point Tangra, Kolkata’s second Chinatown. Tangra saw a rise in restaurants that wanted to adapt Chinese food to please Indian palates. India’s first Sichuan restaurant opened at the Taj Mahal Hotel in Mumbai in 1974.  Chilli chicken cannot be found on menus in China but most Chinese restaurants in India serve it. Even restaurants serving Indian food sometimes add chilli chicken to their menus.

Ingredients for Chilli Chicken Recipe

  • As required FOR THE MARINADE
  • 15 gram Egg white
  • As required Dark soy sauce
  • 2 gram Ginger paste
  • 2 gram Garlic paste
  • 8 gram Salt
  • 1/2 teaspoon Black pepper
  • 1 pinch Baking soda
  • 12 gram Cornflour
  • As required FOR BREADING THE CHICKEN
  • 1/4 cup Cornflour
  • 1/4 cup All purpose flour
  • 1/4 teaspoon Baking powder
  • As required FOR THE SAUCE
  • As required Vegetable oil
  • 2 piece Dried red chillies
  • 75 gram onion squares
  • 50 gram capsicum squares
  • 5 gram Chopped ginger
  • 5 gram Chopped garlic
  • 10 gram green chillies
  • 8 As required Light soy sauce
  • As required Vinegar
  • As required Tomato ketchup
  • As required Red chilli sauce
  • 75 gram Chicken stock
  • 1 pinch Msg
  • 1 teaspoon ground pepper
  • 20 gram Sugar
  • As required oil for frying

Steps To Prepare

  • STEP 1.Cut and wash the chicken and marinate it with eggs, soy sauce, crushed black pepper, crushed ginger and garlic, salt, baking soda and cornflour.
  • STEP 1.Prepare the sauce with dark soy sauce, light soy sauce, vinegar, tomato ketchup, red chilli sauce, black pepper powder, salt, msg and chicken stock.
  • STEP 2.Prepare a solution with cornflour, salt, baking soda and water.
  • STEP 3.Add the chicken and coat well.

Cooking Directions

  • STEP 1.Deep fry the chicken and set aside.
  • STEP 4.Heat a pan with vegetable oil. Add dried red chilies, onions and capsicum.
  • STEP 5.Add sugar, green chillies and ginger and fry well. Add the prepared sauce and mix well.
  • STEP 6.Add the cornflour solution and mix well. Add fried chicken, chilli oil and spring onions (optional).
