  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 0.13 cup Olive oil
  • 1.50 tablespoon Brown sugar
  • 1/2 Chipotle pepper in adobo sauce, diced
  • 1 teaspoon Adobo sauce from the can of chipotles in adobo
  • 2 Garlic cloves, minced
  • 1 tablespoon Coconut oil
  • 1/2 Green bell pepper, chopped
  • 1/2 Red bell pepper, chopped
  • 1/2 Sweet onion, sliced
  • 3/4 cup Jasmine rice, i use brown jasmine rice from trader joes
  • 3/4 cup Light canned coconut milk
  • 1/4 cup Coconut water
  • 0.13 teaspoon Salt
  • 3/4 tablespoon Coconut oil
  • 1 tablespoon Finely shredded, unsweetened coconut
