Simmered chicken and vegetables, chikuzenni, is one of the dishes often served on new years day. The flavour of chikuzenni is a typical combination of dashi, soy sauce, mirin, sake and sugar but the ingredients are stir-fried first so the dish is much richer than other simmered dishes. This is my way of making chikuzenni using a standard cooking method.

  • 3/4 tablespoon Sake
  • 1/4 tablespoon Mirin
  • 2.63 tablespoon Soy sauce
  • 1/4 tablespoon Sugar
  • 35 gram Bamboo shoots
  • 50 milliliter Dashi stock
  • 1.38 teaspoon Sugar
  • 1/4 tablespoon Sake
  • 0.08 teaspoon Salt
  • 1/4 teaspoon Light soy sauce
  • 27.50 gram Burdock
  • 50 milliliter Dashi stock
  • 1/2 tablespoon Soy sauce
