Hydrate the mushroom in water
Blanch the snow peas in dashi a with a pinch of salt
Cut the vegetables
Add oil in a large pot,add chicken pieces after heating and cook until brown
Add the vegatble except for mushrooms and snow peas
Add mushrooms and dashi, cook for 15mins
Add sugar, soy sauce, sake,mirin and mix well
Cook for 15mins
Remove from heat and keep covered so that the ingredients get tender
Garinsh wth snow peas before serving
