A couple of months ago, i went to visit my mom and ran into one of my aunts from new york whos been a vegetarian for more than 20 years. I immediately started telling her about our familys new resolution to try to eat less meat during the week (for health reasons and also to save money) and asked her all about the dishes she cooks daily. She got up right away and started making this easy recipe thats already become one my familys favorites. Its very simple and uses basic ingredients i usually have at home.
