#chicken - This yummy Kerala style hearty Chicken Stew is a must try recipe. Very easy and healthy, it is a perfect meal to be enjoyed with appam, idiyappam or just plain steamed rice. It is in fact a one-pot wonder that can be relished as a light meal too. It is very light on the tummy and the creamy texture from the coconut milk gives it a rich and an aromatic flavour with a hint of sweetness.

Ingredients for Chicken Stew - Kerala Style Recipe

  • 83.33 Grams ms. Chicken curry cut
  • 0.17 Cup cubed raw papaya
  • 0.33 Pieces carrot cubed
  • 2.67 Pieces cut beans
  • 1.67 Pieces sliced mushrooms
  • 0.08 Cup green peas
  • 0.33 Cups Thin coconut milk
  • 0.33 Cup thick coconut milk
  • 0.67 Tbsp coconut paste
  • 0.67 Tbsp coconut oil
  • 0.33 Inch cinnamon stick
  • 1 Pieces green cardamoms
  • 1.33 Pieces cloves
  • 0.67 Pieces Star anise
  • 0.67 Pieces Bay leaves
  • 0.33 Pieces chopped onion
  • Sprig curry leaves
  • 0.67 Pieces chopped garlic cloves
  • 0.33 Inch ginger chopped
  • 0.67 Pieces fresh green chilies slit
  • To Taste salt
  • 0.08 Tsp pepper powder
  • 0.33 Tsp coriander leaves

Directions: Chicken Stew - Kerala Style Recipe

  • STEP 1. Heat oil in a pan and temper with the cinnamon, cardamoms, cloves, bay leaves and star anise.
  • STEP 2. Add the ginger, garlic, onion and curry leaves. Sauté till the onion is translucent.
  • STEP 3. Then add the chicken, veggies and green chilies. Give it a mix. Add the thin coconut milk, salt and pepper. Simmer on a low flame till everything is nicely cooked.
  • STEP 4. Add the thick coconut milk and coconut paste. Give it a stir and bring it to a boil. Switch off the flame. Garnish with coriander leaves and serve with appam, idiyappam or just plain steamed rice.
