This Chicken Rogan Josh is an easy Kashmiri chicken curry that is packed with flavor and tastes just like something from an Indian Restaurant. Although Rogan Josh is usually made with lamb, this chicken version is a little quicker, making a great recipe for a midweek meal. Serve it with some rice and naan breads and your friends and family will be happy.

  • 3/4 g As needed oil and ghee
  • 1/4 Tbsp Black pepper
  • 1/4 Tbsp Cumin seeds
  • 1/2 g Dried ginger powder
  • Sprig Fennel seeds powder
  • 1/4 Cups chopped chicken breasts
  • 1/4 g aram masala powder
  • 1/4 Tbsp Red chilli powder
  • 1 Pieces Red chilli
  • 1/4 g yoghurt (curd)
  • as required Salt
  • 1/2 Pieces Cinnamon stick
  • A Pinch Asafoetida

  • STEP 1.Step 1 / 4 Saute Whole Spices Until Fragrant
  • STEP 2.Heat ghee in a deep-bottomed pan over moderate flame. Add the whole spices and stir fry till fragrant.
  • STEP 3.Step 2 / 4 Add Chicken Pieces & Yoghurt
  • STEP 4.Now add the chicken pieces and cook covered for 5 minutes. Make sure that it is being cooked on a moderate flame. Now whisk the yoghurt and add in the chicken.
  • STEP 5.Step 3 / 4 Add Powdered Spices & Fry Until Oil Separates
  • STEP 6.Add the powdered spices and cook till the moisture is absorbed. Keep the flame high as the chicken cooks fast and would get crumbly if left covered for long. Fry till the oil separates. Add a cup of water and allow it to simmer. Check the salt and seasoning.
  • STEP 7.Step 4 / 4 Adjust The Seasoning & Serve Your Chicken Rogan Josh!
  • STEP 8.Add more red chilli powder and salt if you feel the need. Remove from fire and garnish as per your choice. Serve Chicken Rogan Josh hot with naan and steamed rice.
