  • 2 pound boneless chicken thighs
  • 1 tablespoon Garlic
  • 2 teaspoon ginger paste/1 inch ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 tablespoon olive oil
  • 1 cup Onion
  • 1 tablespoon tomato paste
  • 3 cup Water
  • 2 Nos stock cubes
  • 3/4 cup peanut butter
  • 4 ounce mushrooms
  • 1/4 cup 0.5 frozen thawed

How to Make Chicken Peanut Stew/groundnut Curry Recipe

STEP 01

In a large bowl add chicken thighs, minced garlic,ginger,salt,white pepper and mix everything well.

Add 1 tablespoon oil in a pot & heat it and then add sliced mushrooms followed by some salt and white/black pepper.

Fry each side of mushrooms for 2 minutes Once fried,take out the mushrooms from the pot.

Using the same pot add 1 tbsp oil and add seasoned chicken and cook each side for 5 mins.

After 5 mins take out the chicken from the pot,then add chopped chicken and fry them for 2 mins.

Now add some grated ginger,garlic and cook it for one minute.

Add tomato paste and cook it for 2 minutes. Add 2 cups of water followed by stock cubes and little salt then stir it.

Then add peanut butter and stir it until it gets mixed well, after that add some water to make it thinner.

Add some cayenne pepper and white/black pepper.

Finally add fried chicken and mushrooms and cook at a low flame for 5 mins.

Lastly add some spinach and cook it at low flame for 2 mins.

Serve hot with white steamed rice.
