  • 36.67 gram thinly sliced boneless chicken
  • 0.33 teaspoon Salt
  • 0.33 teaspoon chicken base
  • 0.33 teaspoon Brown Sugar
  • 0.33 teaspoon Cornstarch
  • 0.17 teaspoon sesame oil
  • As required Ingredients for preparing claypot
  • 0.08 cup Glutinous rice
  • 0.08 cup Long grain rice
  • 0.17 cup Water
  • 1 No.s Wood ear mushrooms
  • 0.33 tablespoon Oil
  • 0.33 tablespoon Dark soy sauce
  • 0.33 tablespoon Green Onion
  • 0.33 Nos Chinese claypot for cooking

Directions: Chicken Mushroom Claypot Recipe

Preparation Directions

  • STEP 1.In a bowl add ¼ cup glutinous rice and ¼ cup long grain rice.
  • STEP 2.Wash 3 to 4 times or till the water runs clear. Drain off the water.
  • STEP 3.Wash 3 pieces of ‘wood ear’ mushrooms and soak them in water for 30 minutes.

Cooking Directions

  • STEP 1.Add ½ cup of water in a chinese clay-pot and put it on medium to low heat.
  • STEP 2.When it begins to lightly boil, add ¼ cup glutinous rice and ¼ cup long grain rice that have been washed thoroughly.
  • STEP 3.The rice should be below the level of the water. Cover the pot.
  • STEP 4.Cook on low to medium heat for 15 minutes
  • STEP 5.In a bowl add 4 oz thinly sliced boneless chicken, 1 tsp salt, 1 tsp chicken base, 1 tsp brown sugar, 1 tsp cornstarch and ½ tsp sesame oil. Mix all the ingredients together well.
  • STEP 6.Thinly slice 3 soaked wood ear mushrooms and add it to the marinating chicken.
  • STEP 7.After 15 minutes check the rice. Using chopsticks poke holes till the bottom of the pot, all over the rice.
  • STEP 8.Add the chicken and mushroom on top of the rice. Spread them out to ensure that they cook evenly.
  • STEP 9.Then drizzle 1 tbsp oil over the chicken and mushroom and cover the pot with a lid.
  • STEP 10. Continue to cook for 10 minutes.
  • STEP 11. Check the pot after ten minutes. If the chicken is not yet cooked, poke more holes in the rice, cover and continue to cook till the chicken is done.
  • STEP 12.Lastly add 1 tbsp dark soy sauce and 1 tbsp chopped green onion.

Special Comments

  • STEP 1.If ‘wood ear’ mushrooms are not available regular mushrooms can be used.
