Cooking Directions

  • STEP 1.In a bowl, mix together yogurt, cream, ginger-garlic paste, green chili paste, and spices.
  • STEP 2.Add chicken pieces to the marinade and let it marinate for at least 2 hours or overnight in the refrigerator.
  • STEP 3.Preheat the grill or oven to medium-high heat. Thread the marinated chicken onto skewers.
  • STEP 4.Grill or bake the kababs for about 10-12 minutes on each side, or until they are cooked through and slightly charred.

Cooking Tips

  • For extra tenderness, you can add a tablespoon of raw papaya paste to the marinade.
  • Soak wooden skewers in water for 30 minutes before using to prevent them from burning.
  • If using an oven, preheat it to 200°C (400°F) and bake the kababs for about 20-25 minutes, flipping halfway through.

Storage and Serving

  • Leftover kababs can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, you can either microwave them for a minute or two or reheat them in a preheated oven at 180°C (350°F) for about 5-7 minutes.
  • Serve the Chicken Malai Kababs as an appetizer with mint chutney, sliced onions, and lemon wedges.
