Directions: Chicken Kofta With Yogurt Sauce Recipe

Cooking Directions

  • STEP 1.In a large bowl, combine ground chicken, minced onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  • STEP 2.Shape the chicken mixture into small oval-shaped koftas, about 2 inches long. Place the koftas on a baking sheet lined with parchment paper.
  • STEP 3.Preheat the grill or preheat the oven to 400°F (200°C). If using a grill, preheat to medium-high heat. If using the oven, place the baking sheet with the koftas in the oven and bake for 15-20 minutes, or until cooked through.
  • STEP 4.While the koftas are cooking, prepare the yogurt sauce. In a small bowl, combine Greek yogurt, minced garlic, lemon juice, chopped mint, salt, and pepper. Mix well until smooth and creamy.
  • STEP 5.Once the koftas are cooked, remove them from the grill or oven. Serve the chicken kofta hot with the yogurt sauce on the side. Garnish with additional chopped mint, if desired.
  • STEP 6.Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a preheated oven until warmed through before serving.

Cooking Tips

  • To prevent the koftas from sticking to the grill or baking sheet, lightly oil the surface before placing the koftas.
  • If using wooden skewers for grilling, soak them in water for at least 30 minutes before threading the koftas to prevent them from burning.
  • For extra flavor, you can add grated onion or grated garlic to the chicken mixture before shaping into koftas.

Storage and Serving

  • Serve the chicken kofta with warm pita bread, rice, and a side salad.
  • The yogurt sauce can also be used as a dip for vegetables or as a dressing for salads.
  • Leftover koftas can be used in sandwiches or wraps for a quick and delicious lunch.
