  • 100 g boneless chicken
  • As required cut into small bite-sized pieces
  • 1/2 tbsp Thick Yoghurt
  • 1/4 tbsp Ginger-garlic paste
  • 1/4 tsp Kashmiri red chilli powder
  • As required ½ tsp turmeric powder
  • 1/4 tsp roasted cumin powder
  • As required ½ tsp garam masala
  • As required ½ tsp black pepper powder
  • 1/4 tbsp Lemon juice
  • As required Salt
  • As required to taste
  • 1/4 tbsp mustard oil
  • 1 nos parathas
  • 1/2 nos Egg
  • 1/4 nos large onion
  • As required Thinly sliced
  • 1/2 nos green chillies
  • As required finely chopped
  • 1/2 tbsp fresh coriander
  • As required Chopped
  • 1/4 tbsp Chaat masala
  • 1/4 nos Lemon
  • As required Cut into wedges
  • 1/2 tbsp Vegetable Oil
  • As required Green chutney
  • As required tomato ketchup

Directions: Chicken Kathi Roll Recipe: Kolkata-Style Spicy Chicken Wrap

  • STEP 1.In a bowl, combine your chicken with yoghurt, ginger-garlic paste, Kashmiri chilli powder, turmeric, roasted cumin powder, garam masala, black pepper, lemon juice, and salt. Mix everything together thoroughly and leave to marinate for at least 30 minutes.
  • STEP 2.Then heat mustard oil in a heavy pan over medium-high heat. After that, add the marinated chicken and cook, stirring occasionally, until the pieces have browned on the outside and are properly cooked through. The pieces should develop a lightly charred edge without becoming dry. That is when you know it is time to remove from the heat and keep aside.
  • STEP 3.Now, heat a little vegetable oil in a flat pan and place one paratha on it. Cook until lightly crisp on both sides, then set aside. Repeat with the remaining parathas.
  • STEP 4.In the meantime, beat one egg with a pinch of salt. Add a little oil to the pan and pour in the egg, spreading it into a thin layer roughly akin to the size of the paratha.
  • STEP 5.Immediately place a cooked paratha over the egg while it is still slightly wet. Remember to press gently so the egg adheres to the paratha, then cook for 30 to 40 seconds. Flip briefly, for even cooking, and remove from the pan. Repeat the process with the remaining eggs and parathas.
  • STEP 6.Now place the egg-coated side of each paratha facing upwards. Spoon your cooked chicken onto the centre of every flatbread and top with sliced onion, chopped green chilli, coriander, and a generous sprinkling of chaat masala.
  • STEP 7.You can also add a drizzle of green chutney and ketchup if desired, followed by a squeeze of fresh lemon juice.
  • STEP 8.After that, fold the bottom edge of the paratha upwards, then roll it tightly around the filling. Wrap the bottom half in butter paper or foil to make it easier to eat while keeping the filling tucked safely inside.
  • STEP 9.Serve immediately while the paratha is still warm and the chicken is juicy.
