Ingredients for Chicken Fricassee with Vin Jaune Recipe

  • 1 Pieces Chicken leg thigh
  • 25 g butter (unsalted)
  • 0.06 Litre Vin jaune or white wine 250 ml
  • 1/10 Litre White chicken stock 400ml
  • 0.17 Litre heavy cream 700ml
  • To Taste Fine salt (as needed)
  • To Taste Freshly ground white pepper (as needed)
  • 62.50 g Mushrooms
  • 12.50 g Small onions or shallots
  • As Required For Ganishing Chopped parsley

Directions: Chicken Fricassee With Vin Jaune Recipe

  • STEP 1.Clean the mushrooms carefully.
  • STEP 2.Depending on their thickness, slice them on a diagonal (escaloper) or leave them whole.
  • STEP 3.Blanch them depending on the variety (morels, chanterelles, etc.).
  • STEP 4.Peel and wash the shallot.
  • STEP 5.Melt the butter(50g) in a high-sided skillet and add the mushrooms and shallot.
  • STEP 6.Sweat them for 1 minute without coloring.
  • STEP 7.Add the vin jaune (50ml) and heavy cream (100ml)
  • STEP 8.Cook until the sauce is reduced enough to coat a spoon.
  • STEP 9.Season and set aside.
  • STEP 10.Clean the chicken. Heat the butter in a cast-iron pan. Season the chicken pieces.
  • STEP 11.Lightly sear the pieces in the melted butter on all sides, lightly coloring them.
  • STEP 12.Cover and cook in the oven at 160°C for 15 minutes.
  • STEP 13.Take the pan out of the oven and remove the lid.
  • STEP 14.Deglaze the pan with the remaining vin jaune.
  • STEP 15.Add the white chicken stock and remaining heavy cream.
  • STEP 16.Simmer gently an a corner of the stove for 15 minutes, allowing the liguid to reduce.
  • STEP 17.Transfer the chicken pieces to a receptacle, cover, and keep warm.
  • STEP 18.Reduce the sauce, if necessary, until it is thick enough to coat a spoon.
  • STEP 19.Adjust the seasoning as necessary.
  • STEP 20.Emulsify with a hand-held blender if required.
  • STEP 21.Return the chicken to the pan and add the mushrooms.
  • STEP 22.Garnish with chopped parsley
