Ingredients for Chicken Divan Recipe

  • 1/2 cup Butter
  • 1/2 cup All purpose flour
  • 2 cup Milk
  • 2 egg yolks, lightly beaten
  • 2 tablespoon dry sherry
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup Parmesan cheese, flaked or finely grated
  • 1/2 teaspoon Salt
  • 1/2 cup whipping cream, whipped
  • 2 packages frozen broccoli spears
  • 3 cup chopped cooked chicken
  • As required cooking oil spray
  • 0.33 cup additional flaked or shredded Parmesan cheese for topping

How to Make Chicken Divan Recipe

STEP 01

Slice chicken breast meat into bite size pieces. Season with salt and pepper.

STEP 02

Dust with 2 tablespoons of flour and set aside.

STEP 03

Over medium high heat in a large skillet add 1 tablespoon of olive oil and brown the broccoli slightly, cooking for 3 minutes. Add 1/2 cup chicken broth and cover. Cook for 2 minutes.

STEP 04

Remove from the pan and set aside.

STEP 05

Add the other tablespoon of oil to the skillet and brown the chicken pieces over medium high heat.

STEP 06

Cook for 5 minutes.

STEP 07

Place chicken in a 13x9" baking dish seasoned with cooking spray. Sprinkle broccoli on top of chicken.

STEP 08

In the same skillet add the butter and over medium heat sauté the shallot for a minute.

STEP 09

Sprinkle the remaining 2 tablespoons of flour in the pan and stir to cook.

STEP 10

Add the worcestershire sauce, sherry, chicken stock and half and half. Stir and reduce for several minutes until thickened.

STEP 11

Stir in parmesan cheese and pour over chicken and broccoli.

STEP 12

Sprinkle panko breadcrumbs and more cheese (optional) if you like on top.

STEP 13

Broil for 3-5 minutes until the top is golden brown and bubbly.

STEP 14

Serve with grated lemon zest over top (optional).
