A popular dish at open air food stalls in Hong Kong, made from chicken, crunchy vegetables and flat rice noodles seasoned with sauce tossed together on a hot wok.Chicken chow mein is probably already one of your favorite Chinese takeout dishes. This one-pan dinner is so satisfying with chicken, vegetables, classic chow mein noodles, and the best homemade chow mein sauce. Also, it’s way healthier than ordering takeout.

Ingredients for Chicken Chow Mein Recipe

  • 2 No.s Chicken breasts cut in bite size pieces
  • 3 cup Flat rice noodles half cooked
  • 2 inch Chinese leek cut in s 0.5 cup
  • 2 inch Chinese chives cut in s 0.5 cup
  • 1/2 cup Bean Sprouts
  • 1/2 cup Carrots cut in matchstick size
  • 1 tablespoon Soy sauce
  • 2 tablespoon Dark soy sauce
  • 1 tablespoon Oyster Sauce

Directions: Chicken Chow Mein Recipe

Preparation Direction

  • STEP 1.In a small bowl add 1 tbsp light soy sauce, 2 tbsp dark soy sauce, 1 tbsp oyster sauce. Mix together and keep aside.

Cooking Directions

  • STEP 1. Cut two chicken breasts into bite size pieces. Place these in a bowl and add 1 tsp cornflour, 1 tsp soy sauce, 1 tsp vegetable oil, 1 pinch baking powder and mix well till the chicken is well coated with the mixture. Keep aside for 30 minutes.
  • STEP 2. Heat the wok on high for 15 seconds. Add 1 ½ tbsp oil. When hot, add the chicken pieces and cook on high heat for 1 to 2 minutes till the chicken fries and changes colour. It may smoke. Keep aside.
  • STEP 3. To the oil left in the wok, add1 tbsp minced garlic, ½ cup chinese leeks cut in 2 inch pieces, ½ cup chinese chives cut in 2 inch pieces, ½ cup shredded carrot / matchstick cut and saute on high heat for 1 to 2 minutes.
  • STEP 4.Next add the ½ cup bean sprouts and the cooked chicken pieces and mix everything together. Do not cook too long after adding the bean sprouts else they will not be crunchy. Remove from the wok and keep aside.
  • STEP 5. Heat the wok and add 1 ½ tbsp oil, when the oil is hot add 3 cups semi cooked flat rice noodles and spread them out. Toss noodles using chopsticks and a spatula. Do this gently in order not to break the noodles.
  • STEP 6. Stir fry the noodles for about4 minutes.
  • STEP 7. Then add the prepared chow mein sauce and mix so that the noodles are evenly coated with the sauce. The noodles will be brown and shiny. Mix and toss quickly before the sauce evaporates on the hot wok.
  • STEP 8. Add the vegetables and chicken to the noodles.
  • STEP 9. Add salt and pepper to taste and toss well together.
  • STEP 10.Chowmein is ready.

Special Comments

  • STEP 1. A large saute pan can be used as well.
  • STEP 2. As the chicken is cut small it will cook fast.
  • STEP 3.It is important to cook on high heat to evaporate all the moisture. There should be no liquid left in the wok when cooking chow mein.
